Microwave sweet potato with cottage cheese and seasonings

Ingredients

1 medium sweet potato (yam)

1/2 cup cottage cheese

Red pepper flakes 

A pat of butter, if desired

Salt and pepper to taste

Instructions

Prepare the Sweet Potato: Rinse the sweet potato thoroughly under cold water and scrub away any dirt. Pat it dry with a paper towel.

Pierce for venting: Use a fork to poke holes all over the sweet potato, about 3-4 times on each side. This helps steam escape during cooking and prevents the potato from exploding.

Microwave: Place the sweet potato on a microwave-safe plate and cook on high for 3-5 minutes, depending on the size of the sweet potato.

Flip and Continue Cooking: Carefully flip the potato over (use tongs or an oven mitt if needed) and microwave for another 2-3 minutes.

Check for doneness: Insert a knife into the center of the sweet potato. If it slides in easily without resistance, the potato is cooked through. If it's still firm, continue cooking in 30-second increments until tender.

Cool and Cut: Let the cooked potato cool for a minute or two, then carefully slice it in half lengthwise. Fluff up the insides with a fork.

Stuff and Season: Spoon the cottage cheese into the center of the sweet potato halves. Sprinkle with red pepper flakes, or other desired spices, along with salt and pepper to taste. If you like, add a pat of butter.

Add Optional Toppings: Top with sliced green onion, avocado slices.

*Need:

1 yam, pat of butter, pepper flakes, small avocado, cottage cheese, salt n' pepper, parm cheese, zucchini, mushrooms, apple, cinnamon

Microwave Zucchini & Mushrooms

Ingredients

1 large zucchini

1 box mushrooms

Skosh of butter

Parmesan cheese

salt & pepper, to taste

Directions

Cut up zucchini, toss with mushrooms

Place in microwave safe bowl

Cook 1-2 minutes at a time, checking for "doneness" lol

Add butter & cheese

Microwave Cinnamon apples

Ingredients

1 medium apple, peeled, cored, and cubed

⅛ teaspoon cinnamon

½ teaspoon maple syrup, honey, sugar, or other sweetener, optional

Instructions

Place peeled, cored, cubed apple in a microwave safe glass bowl.

Stir in cinnamon and sweetener (optional).

Cover with another glass plate or microwave safe lid.

Microwave for 2-3 minutes, until apple is tender.

Serve by itself, or with fresh cream or ice cream! Would also be good with graham crackers or in a bowl of oatmeal.
